No neophytes to the healthy-food revolution or the contemporaneous demand for customer service, the Janos’ launched their first Cook’s Fresh Market in the DTC area in 2000 to rave reviews. Not content to be a one-hit wonder, they saw the unmet need in urban Denver and partnered with Butcher Bill Roehl to gear up for a downtown presence.

“We’re culinarians; not just butchers, not just retailers,” notes Kristi. It’s precisely the distinguishing point between Cook’s Fresh Market and any other upscale food source in metro Denver. They’re also international award winners, recently taking 2nd in the World Overall among chefs competing in South Korea against other teams from around the world.

Ed graduated from the Culinary Institute of America in New York in 1977 and Kristi graduated from the same legendary school in 1992. In 1993, he passed the Certified Master Chef (CMC) exam. Fewer than 50 percent of those who attempt the exam—a test of a chef’s cumulative experience—pass it. Ed is one of only 68 such designees in the country.
